Can You Use Vinegar on Natural Stone Worktops? Here Is My List of the Best Alternatives
I get asked this more than any other cleaning question, and it’s usually asked hopefully, by someone who has already been spraying a homemade vinegar solution on a marble island for eight months. The short answer is no. The longer answer is that it depends entirely on which stone you’ve got, that the damage vinegar does isn’t the kind of damage you can clean off afterwards, and that the alternatives are cheaper and easier than the vinegar routine anyway. Most of what follows is chemistry rather than elbow grease, which is the part people find hardest to accept about worktops.
So can you use vinegar on natural stone, or not?
On marble, limestone, travertine, onyx and most cream-coloured stones sold as “natural stone”, no. Those are calcareous stones – their main mineral is calcium carbonate. Household vinegar is around five per cent acetic acid at a pH of roughly 2.4, and acetic acid reacts with calcium carbonate to produce calcium acetate, water and carbon dioxide. That reaction removes stone. It doesn’t lift a mark off the surface, it takes a microscopically thin layer of the surface away with it, and the polished finish goes with it. It dissolves.
This is why the damage looks so odd. A stain sits on top of stone and can be drawn out. An etch is a small crater. You are looking at a change in the shape of the surface, which is why it shows up as a dull patch that reappears from certain angles and vanishes from others, and why scrubbing harder makes it very slightly worse.
A client on Tranquil Vale in Blackheath had a Carrara island she’d been maintaining with a spray bottle of white vinegar and water, mixed to a recipe from a green cleaning blog. The blog was not wrong about the vinegar being good on limescale. It was silent on what limescale and marble have in common, which is everything. Her worktop had a matt ring under the kettle, a matt rectangle where the chopping board lived, and a long dull streak down the side of the sink that traced exactly where the cloth went. She’d been doing what she was told, twice a week, for the best part of a year.
Lemon juice, descaler, wine, tomato passata and cola do the same thing on a smaller scale. A splash of prosecco left overnight on polished Carrara will leave a mark you can see for the rest of the worktop’s life.
What an etch looks like on the worktop
Run the flat of your hand over the area with your eyes shut. Etching has a slightly different drag to the surrounding polish, a faint grip where the rest is glassy. Then get low and look across the surface towards a window rather than down at it. Under a ceiling spot, a small etch is nearly invisible; under raking daylight, a marble worktop in a north-facing kitchen off Highbury Park will show you every mark it has ever taken. If the patch changes with the angle and doesn’t change with the cloth, it’s an etch and no cleaning product will touch it.
Does the same apply to granite and quartz?
Granite is a silicate rather than a carbonate, so acetic acid doesn’t attack the stone. That’s where most advice stops, and it’s incomplete. Nearly every granite worktop in a London kitchen has an impregnating sealer in it, a silane or siloxane that sits in the top few millimetres of the pore structure, and repeated acid exposure breaks that down. The granite is fine. The sealer isn’t. You end up with a slab that starts to darken in patches around the sink and the hob because water and oil are now soaking in where they used to bead, and people blame the stone.
Engineered quartz is worse, and it’s what most people have. It’s roughly nine parts ground quartz to one part polyester resin, and the resin is the weak point – it’s attacked by strong acids and by anything strongly alkaline, including a lot of oven cleaners and drain unblockers. Damaged resin shows as a whitish dulling that never comes back. The stone content is irrelevant to the problem. It dissolves, in its own slower way.
Sintered surfaces – Dekton, Neolith and the porcelain slabs sold alongside them – are untroubled by vinegar. They’re fired at temperatures that leave nothing for acid to react with. You still don’t need vinegar on them, because they don’t hold onto anything in the first place.
How to tell what you’ve got
Find an offcut, or the underside of the sink cutout where the fabricator’s edge is exposed. Put one drop of lemon juice on it, leave it three minutes, wipe and dry. A faint dull spot means calcareous stone. Nothing at all means granite or something engineered. Marble usually shows visible veining that runs through the thickness of the slab; quartz patterning tends to repeat, and if you can see the same fleck cluster twice on one worktop it’s engineered. Limestone and travertine feel warmer and softer under the hand than granite does, and travertine has small filled pits you can find along the edge profile with a fingernail.
What should you use for everyday cleaning instead?
Warm water and two or three drops of pH-neutral washing-up liquid, applied with a microfibre cloth, then a second dry cloth to buff it off. That is the answer for about ninety per cent of daily worktop cleaning on any stone, and the only common mistake is using far too much soap and not rinsing, which leaves a film that dulls the finish and then gets blamed on the stone again.
Beyond that, in order of how often I reach for them:
A dedicated neutral stone cleaner for the weekly wipe-down. Lithofin MN Easy-Clean is the one I keep in the van; Fila Cleaner Pro is the other one worth the money and works out cheaper as a concentrate. Both are formulated to leave the impregnating sealer alone, which supermarket sprays are not.
Isopropyl alcohol at seventy per cent for disinfecting, decanted into a trigger bottle. It’s neutral, it kills what you need it to kill, and it flashes off without leaving residue. Useful on marble after raw chicken, where you can’t use anything acidic and don’t want to soak the stone.
Three per cent hydrogen peroxide for organic marks on pale stone – tea and beetroot. Keep it off dark granite, where it can lighten the surface.
Acetone for oil and grease marks, applied as part of a poultice rather than wiped on.
Why the cloth matters more than the bottle
A stiff, slightly worn microfibre will do more damage to a polished marble edge over five years than any product on that list. Cloths pick up grit from the worktop and hold it. I keep separate cloths for stone and wash them without fabric conditioner, because conditioner coats the fibres and turns a microfibre into a smearing device. If a cloth has been anywhere near a builder’s dust, it’s a floor cloth now.
What removes an actual stain rather than surface dirt?
Stains and etches need opposite treatments, and this is where people waste the most effort. A stain is something absorbed into the pore structure, so it has to be drawn back out. Wiping the surface can’t reach it.
Oil marks on marble and limestone show as a dark patch that looks damp and doesn’t dry. Those need a poultice: an absorbent powder mixed with a solvent into a paste, spread about five millimetres thick over the mark, covered with cling film taped at the edges and left for a full day. As the solvent evaporates through the powder it pulls the oil up with it. One application often isn’t enough. I’ve done four on a butter mark on a limestone worktop in Surbiton and got maybe eighty per cent of it, which is where the client sensibly decided she could live with the rest.
The bicarbonate poultice
Bicarbonate of soda and water, mixed to the consistency of thick yoghurt, is the cheapest version and works well on fresh oil. For older marks, mix kaolin powder or plain talc with acetone instead. Rust marks – from a tin left on the worktop overnight, which is the usual cause – are a different problem, and the commercial rust removers for stone are the only thing that works. Never use one containing hydrofluoric acid in a domestic kitchen, whatever the label says about dilution.
Do sealers stop any of this, and how often should you reseal?
Here’s the thing the showroom in Chiswick will not tell you clearly: an impregnating sealer prevents staining and does nothing whatsoever about etching. Nothing. Acid reaches the stone regardless, because the sealer sits in the pores rather than forming a film over the top. If someone sold you marble on the basis that sealing keeps it safe from lemon juice, you were misled.
Test with water rather than a calendar. Put a teaspoon of water on the worst-used area, leave fifteen minutes, wipe. If the stone underneath has darkened, it’s ready for resealing. Most granite in a domestic kitchen wants doing every three to five years, not annually. Annual resealing sells sealer.
And I’d say this to anyone specifying stone in a working kitchen: buy it honed. Polished marble in a house where people cook is a slow-motion argument you will lose, because a honed surface has no mirror finish for acid to remove. It dissolves either way. You just can’t see it.
Fixing an etch yourself
Marble polishing powder, a damp cloth, and firm circular pressure for ten minutes will bring back a light etch on polished stone. It costs about twelve pounds a tub and I’d rather you bought one than paid me to come out for it. Deep etching, or anything over about the size of a beer mat, needs diamond pads and someone who does restoration full time.
